Chocolate Quinoa Pancakes with Banana Passionfruit Cream


These pancakes are deliciously decadent and perfect for a lazy weekend morning. The softness of the quinoa, and the richness of the cacao and coconut milk make these pancakes oh so satisfying. Serving 2, you can enjoy these pancakes with a loved one or save the rest to enjoy for breakfast again the next morning.


1 cup cooked quinoa
2 eggs, whisked
2 tsp maca powder (optional)
1/4 cup coconut milk
2 tbsp raw cacao
1 tsp gluten free baking powder
1 tsp bicarb soda
2 tsp stevia
Pinch of Himalayan salt

Mix all ingredients together in a large bowl until well combined. Place 2 spoonfuls of mixture for each pancake in a frypan greased with coconut oil over medium heat. Cook for a few minutes on each side until cooked through. Stack each pancake on top of the other on a plate once cooked.

Banana Passionfruit Cream:

Pulp of one passionfruit
1 banana
1 tbsp coconut water

Blitz ingredients in a blender until smooth. Drizzle over the pancake stack, and scatter some berries and sliced banana on top. Drizzle a little coconut milk over the pancakes and serve.
