Layered Choc-Peanut Chia Pudding


What started out as an experiment turned out to be a delicious dessert for two! This dessert is raw, vegan, gluten-free, refined sugar-free and dairy-free… Hope you enjoy!

Bottom layer:

  • 1/4 cup cashews (pre-soaked for a minimum of 2 hours)
  • 1 tbsp natural peanut butter (I used Mayvers brand)
  • 1 tsp rice malt syrup
  • 1 tbsp melted coconut oil

Blend in a small blender or food processor until smooth. Press base into the bottom of 2 small jars or glasses. Place in the freezer to set.

Chia pudding layer:

  • 1 tbsp raw cacao powder
  • 1 tbsp rice malt syrup
  • 3 tbsp chia seeds
  • 1/3 cup of coconut water

Mix together until thickened. Pour evenly between jars over the base and refrigerate to set (at least 1 hour).

Chocolate sauce:

  • 2 tbsp melted coconut oil
  • 2 tsp raw cacao powder
  • 2 tsp rice syrup

When you are ready to serve the chia puddings, mix the sauce ingredients together until smooth. Top puddings with sliced banana and drizzle chocolate sauce over the top.
