I love how easy and delicious this recipe is, so I would love to share it with you. Although this unprocessed like your regular chocolate mousse, it is quite rich and filling so you only need a small amount per person. A great recipe to whip up before you start dinner, so that it has time to thicken into a delicious, velvety mousse.
Ingredients: Serves 2
1 cup coconut cream (leave a can in the fridge overnight & scoop the thick cream off the top).
2 tablespoons raw cacao powder.
1/4 frozen banana.
1 tbsp maple syrup.
Blend all ingredients in a blender until smooth. Pour into a medium sized mixing bowl and using an electric beater or whisk, whisk for 3 minutes until thickened. Spoon mixture into small glass cups for serving, and place back in the fridge (covered) to thicken further. After about an hour, the mousse should have a similar consistency as whipped cream.
1 tbsp melted coconut oil.
1 tsp raw cacao powder.
1 tsp maple syrup.
Just before you are ready to serve, mix the coconut oil, cacao and maple syrup in a cup until well combined and smooth. Drizzle over the top of each serving of mousse and sprinkle some chia seeds and shredded coconut on top to finish it off.
